We'll guide you through the most important aromas, explain how to recognize quality, and why bitterness and sharpness aren't flaws – but signs of character. We'll also serve small, fine Mediterranean accompaniments – depending on the season and daily freshness. This could be fresh bread, tomatoes, some yogurt, feta, or olives. No show, no big menu – just honest food that carries our oil and doesn't cover it up. A simple, warm mini-pairing that shows how little it takes to eat well. You'll also learn how we work: from the tree to the bottle, in small batches, fair, sustainable, and without mass production. We hand-pick every olive – and that's exactly what you'll taste.
